The riserva del vino nobile is created exclusively in exceptional years in which the grapes from our old vineyards are carefully selected and vinified separately. the longevity of this wine usually requires that the maturation in wood is followed by a period of refinement in the bottle, sometimes even an important one, necessary to achieve a perfect balance of all its components. mainly sangiovese and canaiolo nero grape varieties. maturation and refinement after a refinement period of 15-18 months in 500 liter french oak tonneaux and/or in 30 hl slavonian oak barrels, the wine is left to refine in the bottle for a further period of 12-25 months. structured and important dishes, it goes perfectly with pasta with sauces based on game, mushrooms or truffles, grilled and stewed red meats, baked or stewed game, roasts and mature cheeses.

The historic core of the poderi boscarelli vineyards, in cervognano, are planted on calcareous soils of alluvial origin, sandy with a good percentage of silt and clay, mineral and rich in stony skeleton varying according to the position. produced with grapes selected in vineyards that are at least 20 years old which give greater complexity and excellent aging potential. the vines that contribute to the composition of the vino nobile riserva are 88% sangiovese prugnolo gentile and colorino. aging the riserva ages in slavonian or french oak with a capacity ranging from 5 to 25 hl, where the malolactic fermentation takes place. maturation lasts from 28 to 32 months. before marketing the wine ages in the bottle for a few months.
Manvi's nobile di montepulciano riserva ojas represents their flagship wine and is not produced every year but only in the best years. this translates into careful selection of the grapes and limited production. manvi's ojas is produced with 100% sangiovese and matures in french oak barrels for 30 months. this is then followed by another year of refinement in glass before marketing. the characteristics of ojas make it perfectly suitable for example for a nice cut of beef or an excellent pecorino stagionato di pienza.
