The riserva del vino nobile is born exclusively in exceptional years in which the grapes of our old vineyards are carefully selected and vinified separately. the longevity of this wine usually requires that the aging in wood is followed by a period of refinement in the bottle, sometimes even important, necessary to achieve a perfect balance of all its components. grapes mainly sangiovese and canaiolo nero. maturation and refinement after a period of aging of 15-18 months in 500 liter french oak tonneaux and / or in 30 hl slavonian oak barrels, the wine is left to refine in the bottle for an additional period of 12-25 months. structured and important dishes, it goes perfectly with pasta with sauces based on game, mushrooms or truffles, grilled and stewed red meats, baked or stewed game, roasts and aged cheeses.
The nose is deep and complex, with hints of iris, citrus and small black fruits, complemented by elegant balsamic notes. the taste is progressive, long, with a tannicity of rare finesse. the maximum expression of sangiovese di vallocaia. grapes 90% sangiovese, 10% colorino del valdarno. maturation and refinement 2 years in tonneaux and large barrels, both of french oak, 1 year in bottle. pairings: aged cheeses, main courses of red meat, game
